How to Keep Popcorn Fresh: Simple Storage Tips

POPRUS Classic popcorn jar, 6.70 oz, sealed with a tight black lid

There is nothing sadder than popcorn that was crisp yesterday and chewy today. The good news: popcorn does not go bad quickly. It goes stale, and stale is almost always about how it was stored. Here is how we keep ours fresh at home, the same way we do in our Brooklyn kitchen.

Air is the enemy

Popcorn loses its crunch when moisture moves in or out of the kernel, and that happens through the air around it. Left open in a bowl or a loosely closed bag, popped popcorn starts softening within hours. The fix is simple: get it into an airtight container once it cools. A jar with a tight lid is perfect - which is exactly why we pack our popcorn in jars in the first place.

Room temperature, cool and dry

Store the sealed jar at room temperature, somewhere cool, dry, and out of direct sunlight. A pantry shelf is ideal. Keep it away from the stove and the top of the fridge, where heat builds up. Heat and light are rough on the coconut oil in the popcorn and will flatten the flavor long before the popcorn technically spoils.

Skip the refrigerator

It feels like the fridge should keep things fresh, but for popcorn it backfires. Every time the container comes out, condensation forms, and that moisture goes straight into the kernels. The fridge also dries food out over time. A sealed jar at room temperature beats the fridge every time.

How long does it keep?

Sealed airtight, popped popcorn stays crisp for a week or two, though in our house a jar never lasts that long. Because we hand-pop in small batches and never add preservatives, we tell customers the same thing we tell our own family: the sooner you open it, the better it is. An unopened jar keeps its crunch for three months - that shelf life is printed right on our labels.

Revive popcorn that has gone soft

If a batch does lose its crunch, you can bring it back. Spread the popcorn on a baking sheet and warm it in a low oven, around 250°F, for about five minutes. The gentle heat drives the extra moisture back out, and the popcorn crisps up as it cools. Let it cool completely before it goes back in the jar, or the trapped steam will undo your work.
